Stews

Stew is a sauce or gravy made of mainly meat, fish or vegetables and liquid cooked slowly to produce a thick sauce with rich flavour.

There are three types of stews cooked in South Sudan. The most popular is the plain dama (tomato sauce) which is the base of most stews cooked with any meat or fish in a tomato sauce or added tomato puree during the cooking. The second stew is called chorba and is made up of any meat or vegetables cooked with onions and more water than the dama. The third stew is produced using  two or three ingredients only, such as legumes whether fresh peas or dry fava beans.
